White is the most consistent category in alcohol-free wine. With no tannin structure to preserve, white grapes handle dealcoholization better than reds, and the acidity survives the process. The standard holds across several grape varieties, not just one.
Aromatic grapes fare best. Verdejo, Sauvignon Blanc and Chenin Blanc all keep their character through dealcoholization, because so much of what defines them is aroma and acidity rather than weight. Neutral varieties have less to give in the first place and thin out once the alcohol is gone.
What separates the good bottles from the rest is acidity that carries and a finish that stays dry. Many producers add sugar to compensate for flavour lost in the process. It shows immediately, and it is the most common reason an alcohol-free white disappoints.
